 Eating a plant-based diet can be a great way to boost your health and reduce your environmental impact, but it can be challenging to keep your carbohydrate intake low while avoiding meat and dairy products. Here are a few plant-based, low-carb recipes to try:


Tofu and vegetable stir-fry: Cut tofu into bite-sized pieces and stir-fry in a nonstick pan until lightly browned. Add chopped vegetables of your choice (such as bell peppers, mushrooms, and broccoli) and continue to stir-fry until tender. Season with soy sauce or tamari and serve.




Spaghetti squash with marinara sauce: Cut a spaghetti squash in half and remove the seeds. Bake in the oven until tender, then use a fork to scrape out the spaghetti-like strands. Heat up your favorite marinara sauce (check the label for added sugars) and serve over the spaghetti squash.





Chickpea and vegetable curry: In a large pot, sauté chopped onion and garlic in coconut oil until tender. Add chopped vegetables of your choice (such as cauliflower, zucchini, and carrots) and sauté for a few minutes. Add a can of chickpeas, canned diced tomatoes, and your favorite curry spices (such as cumin, coriander, and turmeric). Simmer until the vegetables are tender and the flavors have melded together.
